WHEATMEAL GIRDLE CAKES Half cup wheatmeal flour, i cup white self-raising flour. | teaspoon baking powder, i cup sugar. 1 cup milk. Pinch carbonate soda. 2 large eggs. 1 tablespoon melted butter.

Place girdle or thick frying-pan over low heat to heat evenly. Mix flours, baking powder and sugar together. Beat eggs, add milk, and pour into a. well in the dry ingredients. Mix lightly into a thick batter, add melted butter and carbonate of soda and mix well together. Grease the heated girdle with a piece of bacon fat or suet tied in a muslin bag. Place one dessertspoon of mixture at a time on to the girdle in a neat round shape, keeping them well apart. When it has risen and set, turn carefully. When cooked, place on a cloth to cool. Serve with butter and honey if liked.
