PEACH SPONGE 126 dried peaches. 1 egg. 1 tablespoon sugar. 4 tablespoons milk. 1 cup self-raising flour. Pinch of salt. Icing sugar. Soak the peaches, then stew with a little water and sugar. Beat egg and sugar together, add milk, then sifted flour and salt. Put the hot peaches into a pie dish, and pour the batter on top. Bake in hot oven for first 10 minutes, then in cooler part of oven, until sponge is cooked through (about 30 minutes). Sprinkle fairly thickly with icing sugar as soon as it is removed from the oven. Serve hot, withiboiled custard.
