STUFFED BEETS 3 cooked beetroots, loz minced, cooked corned beef. 2oz minced, cooked rabbit, loz minced, cooked bacon. J teaspoon salt. Few grains cayenne. 2oz cooked peas.

Peel cooked beetroots. Take a slice from each and fashion out a cup with the aid of a teaspoon. Fill cups with mixture made from remaining ingredients. Place lids in position and reheat in a slow oven. 320 degrees F. Note: Any minced meat will be satisfactory. In such a fashion the cups may be filled with a mixture of cooked, diced, left-over vegetables, moistened with a white sauce. SARAH.
