COOKING QUALITIES OF LAMB
The Australian Meat Board reports that a comparative test .recently made between the cooking qualities of Australian, New Zealand and United Kingdom lamb turned out very favourable for the Australian article. This fact is expected to be of great assistance to the board in just launched to popularize Australian meat in the United Kingdom. The scheme will be aimed at bringing Australian meat under the notice of the wholesale and retail trades. For the purposes of organization, it is intended that, ultimately, the United Kingdom will be divided into four districts, in each of which a representative will be stationed, but for the present only two officers will be appointed. Representations will be made to purchasing officers of county councils and other public institutions which buy large quantities of meat, and to distributing firms and co-operative organizations. In addition, publicity will be given in the recognized trade journals to early arrivals of new season’s meats, such as lamb, and markets in large consuming areas will be suitably placarded.
