The sale of naturally poor milk, that is milk that does not comply with the legal standard for solids other than fat, presents a difficult problem in Canterbury and also in Auckland, says the annual report of the Dominion Laboratory. It points out that the legal standard of 8.5 per cent, is considerably below the standard of average-quality milk, which is 9 per cent. The report adds that the legal minimum requirements for the reductase test is that milk shall not decolorize the methylene blue in less than three hours, but the percentage of samples reducing in five hours or under is only 3.4 per cent. This indicates that the legal minimum could be increased to five hours with advantage.
