TODAY’S RECIPE

APPLE CUSTARD MERINGUE Stewed apples. 1 tablespoon cornflour. 1 cup milk. Pinch salt. 2 eggs (yolks and whites separated). 2 tablespoons sugar. I teaspoon vanilla. Mix cornflour and sugar with a little of the cold milk. Heat remainder of milk and stir in cornflour mixture. Boil two minutes. Remove from fire and add egg yolks, slightly beaten. Cook till mixture thickens, but DO NOT BOIL. Add vanilla. Place stewed apples in casserole dish. Pour over soft custard. Whisk egg whites till stiff. Add two tablespoons sugar and whisk again. Pile meringue on top and reheat and brown off in a slow to moderate oven, 330 degrees F. Any fruit may be used in place of apples. SARAH.
