TODAY’S RECIPE

EGG AND CHEESE TIMBALES 3 eggs. 1 cup milk. 1 tablespoon butter. 1 tablespoon flour. 1 cup tasty, finely-grated cheese. s teaspoon salt. | teaspoon pepper. J teaspoon Worcester sauce. 1 teaspoon onion juice. Melt butter, add flour and seasonings. Blend thoroughly, add milk gradually, stirring constantly. Boil two minutes. Remove from heat. Add beaten eggs and cheese. Place in well-greased timbale mould, custard cups or casserole dish. Set in ,pan of water and bake at 325 degrees F. until the mixture is set. (Approximately 45 minutes). To test, slip knife through centre. If it comes out clean the mixture is set. Turn out carefully on to a platter and serve with tomato sauce. SARAH.
