Quality in beef cannot exist without a reasonable amount of fat. However, it should not be assumed that, because beef must be fat in order to be good, all fat beef is good beef. Cows may carry a considerable amount of fat, but neither the fat nor the lean from an old animal possesses the desired quality. The fat on beef from an animal of this kind can usually be distinguished by its softness and high colour.
