Although there are many factors which might affect the flavour of milk, there are only two principal causes of off-flavours in milk at the time it is drawn from the udder. Perhaps the most common of these flavours is due to the feed eaten by the cow. The other main source of undesirable flavours in milk is the cow in advanced lactation or those having a diseased or inflammatory condition of the udder.
