In reply to your inquiry for a tasty way to use stale cheese I enclose a receipe which I find very good.

Cheddy Cheese. Take 11b cheese, Jib butter, 1 cup milk, 2 eggs well beaten, J teaspoon salt, 1 good teaspoon mustard, good shake of pepper. Grate the cheese on the vegetable grater and put all ingredients into a saucepan and bring to the boil but do not let boil; pour into jars.
