At a lecture held at New Plymouth on 21st September, Mr Fawcett, the wellknown Economist, attached to the Agricultural Department, dealt with the question of the value of HIGH and LOW testing milk for cheese making from the point of farm economy. He said he had studied the matter from the works of leading authorities in all its aspects and his deductions were as follows, taking the JERSEY as representing the high testing and the FRIESIAN as the low’testing milk:— “It would appear that the Friesian will produce 12.7 per cent, more cheese per animal than will the Jersey, but this increase is more than compensated for by the fact that the Friesian consumes 31.7 per cent, more food per head than does the Jersey. This gives the Jersey a clear 14.5 per cent, better utilization of food than the Friesian.” In other words the JERSEY WILL RETURN to the farmer a 14.5 PER CENT. GREATER PROFIT.
