GEORGE Preserving V.'orks hero on the 92nd nil., inspected their plant', promises, appliances, and processes, ami took samples of five different kinds of St. George James for analysis. The results of my examination carefully performed by chemical and microscopical methods are as follows, and they apply equally to jars and tins, arid to all of the live kinds of jam (strawberry, raspberry, black currant, apricot and peach). 1. The Jams arc specifically what on their labels they are. represented to be; 2. There is no admixture with extraneous fruity. 3. The colouring is that proper to the fruit named on the label. •1. The sweetening and preservative is cane sugar in all cases, and there is enough of it to prevent fermentative and degenerative changes. finally these jams arc of excellent quality, skilfully prepared. and free from every species of adulteration.
