Two Dairy Experiments
♦■ From the Scottish Agricultural Gazette we obtain the following record of two experiments conducted at the Munster Dairy School, Ireland. The new milk, after being carefully mixed, was divided into four equal parts and Bet'ae follows : (1) In ordinary shallow tin pans for 24 honrs. (2) In ewnrtz cans, cooled in iced water, for 18 hours. (,3) In cooley cans, cooled in iced water for 18 hours. (4) Passed through the centrifugal separator. The greatest quantity of butter was got from the separated cream, being- 26 percent more than from the cold water systems, and 24 per cent over the ordinary pans. Four experiments were made (o compare the quantity of butter from cream churned tweet, and cream moderately ripe by keeping. In every case cream gave the greatest yield, tbs increase varying from 5 to 9 per cent.
