Old Potato Souffle
TFIIS is a light and nourishing dish 1 and an excellent way of serving ohl potatoes. Beat three mashed hot potatoes until smooth and light. Stir in a tablespoon of melted butter, two tablespoons of cream, two beaten egg yolks, a teaspoon of chopped parsley, salt, and pepper, and beat all well together. Beat, three egg whites to a stiff froth and fold into the mixture. Place in a well-buttered souffle-dish or fireproof baking dish and bake in a moderate oven (350 degrees) for half an hour.
