FUTURE OF DAIRYING
CONSUMPTION IN BRITAIN
A great development in dairying was taking place in the countries of the Old World, said Mr. F. B. Stephens, lecturer in economies at Auckland University College, in an address to the Auckland branch of the Economic Soeiety of Australia. and New Zealand. These countries were turning to dairying because they realised they could not compote with tin' New World in arable farming. The conclusion was that in tho next decade a definitely increased output of dairy produce throughout the world was inevitable.
Cheese was in a category rather ditfevent from that of butter. ‘I lie very small increase in the consumption of cheese in the past- decade suggested that the market for that commodity was more elastic.
In the discussion that followed Mr. ■Stephens' address, the opinion was expressed that the consumption of butter in Britain could be increased to four times its present magnitude, that the market would adjust itself, and that New Zealand could look forward with confidence.
