POTATO BREAD.
A LOAF FROM THE MINISTRY OF FOOD. LONDON, January 2. An experimental loaf of the potato bvead which we shall have to eat very shortly has been sent to the Daily Mail by tlie Ministry of Food. In my opinion the loaf is far nicer than most of the bread obtainable lately. It is of close texture, more friable, and a li,ttlo lighter in color than ordinary war, bread, and quite sweet-tasting. The proportion of potato used is 10 per cent. It. has ibeen found by experiment that frorii 151b. to 201b of potatoes can be added to each 2801b. .sack of flour Plant for making potato flour is being provided, and as soon as the supply is sufficient its use \vill be made compulsory for both shop and home baking. Meanwhile bakers nre urged to use - potatoes in the form of potato mash, for which only a fe'w simple utensils are lecessary. At first the addition sliould iot exceed. 151b. or 201b. to the sack, jut this can be increased as experience s gained. An agreeable feature of this bread is that it keeps moist, and at the md of twenty-four hours eats quite resh. _■'.■"" I
