MEAT EXPORTS.

A complaint .regarding the adnunis- I tration ot the Agricultural Department affecting the export trade of meat was voiced to a Herald representative today by Mr W. D. Lysnar. The latter explained that for many years frozen meat exported from the Dominion had . been shipped without kidneys. Argen- 1 tine and Australia,' however, adopted '■ the practice of shipping the kidneys with carcases and with good, results, retailers preferring to have the kidneys with the meat. Last year, however, with the initiation of the Bristol and Dominions Producers' Association, they exported to the West of England ports over 50.000 sheep and several hundred head of" cattle with; the kidneys. Last week he had ascertained that, without warning,, instructions had been issued from Wellington .that all kidneys must be removed out of beef carcases- He accordingly sent the following protest to the Director of the Agricultural Department. ' "Mr Broom, your local supervisor, informs me he has your instructions that kidneys must be removed from all cattle for export. This. I suggest, is most detrimental to stock owners, as their stock comes. into competition with Argentine and Australian beef, which have kidneys left m, as English but>chers prefer meat containing kidneys, which improve appearance aud are required by trade. Consequently if kidneys ara removed our beef is offered at discount. Last year I personally exported over four hundred head of beef Avith kidneys m with excellent results and not a single complaint, but on the contrary am informed kidneys being m assisted sales. Kidneys are left m at abattoirs, and if this is allowed for local consumption, then why Temove for export, to farmers' detriment and benefit of freezing works, who retain kidneys without making allowance to fanners. Matter urged as cattle being killed for me next Monday, and I wisn kidneys left m unless they a,re known to be diseased. Instruct your officers here early." As the outcome of this protest the local inspectors were instructed to permit the kidneys to remain, bui the word came too late for the particular mob of cattle.
