BONE TAINT IN BEEF.

A REMEDY DISCOVERED. '

Of considerable importance to New Zealand is- the subject of bope taint m beef. The insurance companies. . indeed, had refused last year to. include m, their policies the risk, of bone taint. Trouble ha«s .been experienced from brie end ; of New \Zealand. to. another through beef; shipments landing. Home .with , this taint, Avhich very considerably depreci-: atedf the value of -the jneiv, -and the returns that it gave, to the producer. The, trouble has been pairticularly pronoui)ced with North island meat, and was giving so much concern., thait >lr John .Clark, on his recent visit to Englanjd,; •ft'hich was mainly a pleasure trip, madei it one of his few business objects during his stay m the Old Country to institute enquiries into the" subject^ arid, if possible, to find out the secret of bone taint, and its remedy. After spending a considerable amount of time.apd troublei m investigating/assisted by some, of the, meat-sellers from 2^ew ' Zealand-, Mi. Clark secured an introduction to >*fr Hall., manager of Swifts Ltd., '.-wjipi handle* vast* quantities of Airierican beef. Mr Hall' furnished: Kirn with full particulars of how the meat is killed and frozen by up-to-date American concerns,] and this information Mr Clark' sent for-! ward by mail to the Gisborne Sheep-, farmers' Frozen Meat Company. At) very considerable cbst, running into between £1500 and £2000, the company; accepted and carried through the recommendations Mr Clark was able tosupply, and it is very gratifying to be' able to record that they have been attended., with success. This yveek Mr : Cl.ark received a cable message • frdrri his London agerit*, stating that after careful' enquiry he had" ascertniried that bone taint is now quite unknown' m the Gisborne Sheepfarmers'' Cotrripany's consign-' merits. Consid ering that tlie export of beef from i.his distri-it last ran into close on ten milHo'n pounds, and for the; whole Dominion over .62 million pbundis weight, it will; be seen that a remedy: for bpne taint must add appreciably to, the selling value of New Zealnrid beef, and put it m greater demand, and is of considerable importance to producer's and this country as a whole.
