Mutton was ticketed in Dunedin this week (says the ‘Dunedin Flar') at os (id per side—mutton that most housewives like, neither coarse nor overfat. There cannot be much for the sheep farmers whose meat is retailed at that price. And when one .talks about the profits that butchers are making it ought tu bo borne in mind that the total charges of handling—the killing, the inspecting, the stamping, the carting, ami so forth—come to as nearly as possible 2s dd per carcase.
