MISTAKES IN CHEEISE-MAKING The more prominent mistakes of cbeesemakers during the past season hav© been in setting the milk too soon cr before it was sufficiently ripe to add the rennet, resulting in most cases, in leaving the cheese with a sweety flavour and an open porous body. This was the case more especially in early spring. Two of the makers at the factories visited were using very inferior rennet extract, and some too little, thereby causing a great injury to the texture of the cheese, and a heavy loss in quantity through want of proper coagulation. Many of them were nob draining the curd enough, after theexpulsion of whey, thus causing the cheese to cure more rapidly through retention of moisture. The use oT racks in the making-vats or curdsink would obviate the latter difficulty. WOMEN’S FRANCHISE. The Legislative Council last night endorsed the principle conta ned hi the Electoral Bill extending the franchise to women by a major.ty o.f two, the voting being 20 to 18. Considerable excitement was manifest m the division, the galleries being well filled with ladies and general public. In spite of the fact that the granting of the franchise to women has got
through the Council it is an open secret that the whole Bill will not get. through the Upper Chamber. Li the House of Representatives tlie Licensing Bill was read a third time on the voices last night, Sir R. Stout’s hostile amendment being negative u by 25 to 13. The Bill was then passed and tlie House rose at 3 a.in., the debate on the final stages having lasted nearly 10 hours.
