HOTCH-POTCH. Required: Half a pound of any meat (fat and lean), one quart of cold water, Joz of dripping, Jib of mixed vegetables (the more mixed the better), 4oz of parboiled butterbeans, 2oz of rice, one tablespoonful of chopped parsley, salt, pepper. Prepare the vegetables and cut up in the fashion rnoet. suitable for their kind. Cabbage and lettuce should be finely shredded, not chopped.. Cut the meat up smell, put all the ingredients, except parsley, into a saucepan, add the water and a little salt. Heat quickly to boiling point. Cover the pan, and let its contents simmer for two hours. Add the parsley and' necessary seasoning. Turn into a hot tureen, and serve with bread or potatoes. N. 8.: If the meat is really fat, there is no need to add dripping. Cooked meat can be used, adding it when the vegetables and rice are nearly cooked, but the dish will then be le"ss nourishing. ONION AND MARROW PIE-.
Required: One small/ish marrow, lib of onions, loz of dripping, Joz of grated cheese, seasoning, browned crumbs. Peel and seed the marrow, cut it into blocks, and then again into slices about Jin or rather less in thickness. Peel, and very thinly slice the orions. Grease a pie-dish, dust it over inside with a mixture of cheese and crumbs. Pill the dish with layers of sliced . onion and marrow, adding seasoning. Sprinkle all the top over with cheese mixed with about half its amount in crumbs. Put any remaining dripping in fine flakes over the top. Bake in a moderately hot oven till the marrow feels perfectly soft when pierced. Serve at once with sippets of toast. Makes a delicious accompaniment to fried bacon, ham, or other fried foods. For a change, try it made with sliced swedes or turnips. APPLE AND SEMOLINA CASTLES.
Required. Half a pint of milk, half , a pint of water, half a pint of stewed apple and juice, 3oz of semolina or small sago, half a teaspoonful of powdered "spice, sugar, one egg. Put the milk-and-water on to' boil. When boiling, sprinkle in the semoline. Stir and cook till it is quite olear, and the whole very thick. Mix in the stewed apple and juice. Add the spice and sweetening. Cool for five minutes and then beat in. the egg. Turn the mixture into greased cups or little basins, or into one big basin, if you like Twist pieces of greased paper over the tops. Steam for one hour. Let stand for three minutes after taking them from the pan. Then turn out care-rully on to a not dish, and pour round and over a little warm apple jelly as sauce. A. simple sweet cause can be served with them. N. 8.: Any other fruit can be used. Blackberries make a very nice change. This same mixture makes a nice baked pudding. LIVER BALLS. Mince up Jib of liver finely, with ah equal quantity of breadcrumbs, then add a teaspoonful of dried sage, chopped oniion, and seasoning to taste. Moisten the mixture with a little milk, roll linto balls, and make in a moderate over for 45 minutes. Gravy may be served with these balls if desired. MADEIRA CAKE. Take 6oz butter,. 6oz sugar, Jib flour, four eggs, half-teaspoon baking-powder, and any flavouring desired. Lin 3 a cake-tin with greased paper. Cream the butter and sugar, add the egg's one at a time, beating them well in, and stir in the flavouring. Gradually sift in flour, adding baking-powder with last spoonful. Pour into prepared tin and bake in moderate oven. Crystallised cherries or lemon peel may be added to the cake mixture, and a piece of peel should be placed on top.
