Peel the pears, quarter them, and take out the core and pips, put into a stewpan, just cover with -water (cold), boil until quite tender; then add |lb sugar to lib fruit ; grate the rind of a lemon, and after taking off the pith cut the ienion into thin slices, a teaspoonful of ground ginger, and boil all together for threequarters of an hour; then, after having soaked Joz gelatine, add it and boil for another quarter of an hour.
