ANSWERS TO CORRESPONDENTS.
i Thelma. — For macaroons, take Jib of sweet almonds, the lind of one lemon, the white of one egg, Jib of sugar; the almonds to be blanched and pounded, the lemon rind chopped finely, the white of egg beaten stiffly : mix these ingredients together, place in little heaps on buttered paper, keeping them as round as possible. .Bake in a slow oven till of a light brown colour. S. F. E. M., in thanking M. 8., Inglewood, for supplying the recipe asked for, says: — "Lemon cheesecake, lemon honey, and lemon butter are all names for the same mixture. Some years ago when I was in Melbourne I tasted it. It was during the summer, when butter is more liquid than solid, and notvery appetising. My hostess had it on tlie tea-table as a substitute for butter, and she called it lemon butter. Last winter in the north I had it at a friend's, and she^aid it was good for sore throats, and she cabled it lemon honey. Now 'M. B. gives me a new name foi it — lemon cheesecake. But what does it matter? The mixture tastes the same : it is very good."
