The meat from a pound of round or sirloin steak is carefully freed of fat, and cut into rather small pieces to go into a meat chopper. After a few minutes of chopping the fine pulp which rises fiom the meat during the process of chopping is lemoved and put aside ; continue to chop and to remove the pulp, until only the fibre of the meat remains. The pu'.p is pressed into a round, flat cake, and broiled over a very hot fire on each side for about five minutes. It is then seasoned lightly with salt, a dash of cayenne, a little butter, and served very hot. If -preferred, this pulp may be s-erved almost entirely uncooked. In that case the pulp should be seasoned before it is formed into a cake. When making a rich cake always dredge flour -over the fruit before adding it to the rest of the ingredients. This prevents it from sinking to the bottom of the tin while cooking. Another thing to remember is to -.lose the oven door very gently if you have ouened it while the cake is Halting.
