CALF'S LIVER STEWED.
Takr =ome calf's livei. cut n into neat slices, «;pi inkle it with pepper, salt, and parsley, chopped fine. Place a piece of butter m the stev.-pan, and, when melted, let a shallot remain in it for five miuute«, then remove tne sha'lot, and place in the s.ices of livei. Set the str.vpan on tho fire, ancl let it cook slow 1 }' — it must not even simmer. It will take about an hour. Make a gravy by taking a tablespoonful of gravy or soup, putting it into the stevpan with the liver gravy, and letting it boil up, then ser»e the liver with the sauce over, ard rolls of bacon between every two slices.
