STCHYS" AFFINIS,
This -new vegetable which as" being offered to the public is a native of China, and in America has proved to be of considerable value. The tubers, which are as white aa ivory, are about 2in in length, and of a delicate flavoui*. They may be cooked in a variety of ways — boiled in water with a pinch of salt, and then fried, they are quite a delicacy. In England they are
cooked and served like whitebait, and are said to be an excellent substitute for that dish. They are very productive. Those I planted last spring yielded over a hundredfold. # ITow is the time to plant tubers and being perfectly Lardy, there is no danger of injury by frost. They are best left, in the ground during winter, and only lifted as required for use.
