HARICOT SOUP.

Wash one pint of haricot beans, and soak them for 24 hours. Then strain them, and put them into a pan with two quarts of water, a teaspoonful of salt and an onion. Let them boil nearly three hours till quite tender ■ rub them through a wire sieve, using the liquor to moisten them. Return what has passed through the sieve to the saucepan, add a pint of milk, or rich stock, loz of butter, pepper and salt to taste, boil up and serve.
