It i% spread out and dried in thin layers in the sun or in the smoke of fires, or it is coagulated by leaves of a kind of vine. A good tree will yield 4oz of juice daily, or 20gAl in a season, a gallon producing 21b of good rubber. It is then boiled in large tanks" to soften and purify it, theu_ put through powerful machines which masticate . and reduce it to shreds, a stream of water being ' kept constantly running over it. ficially. . Subscriber, Waikawa.— (l) *The following is a simple mode of making cheese for family use :— Set a tub of new milk in a warm place. Curdle it by dissolving a little rennet in hot water and adding it to the milk. It should curdle in six or eight houra. When well curdled strain off the whey, and break lip the cunis email with tho hands ; heap it ud in little heaps, so that it may drain well ; add" a • handful of salt, mixing

it well ; let it stand for two or three hour*, and break it small again. Then put a cheese cloth into a cheese vat (* little perforatacl tub the size of the intended cheese), and fill it with the curd. A board must then be placed upon the top, and pressure applied gradually, commencing with 4cwt or scwt, and leaching to a ton the second day. Turn ihe cheese aud press further for a day. Turn it out and grease it well after dipping in brine, aud place it on a dcy, cool shelf to ripen, turning it every day for a month or two. (2) See answer in this week's Ladies' p*ge. If you do 'not care, about the caustic potash, perhapa the following method will suit yon :— Pour 12 quarts of soft water (boilini?) on 241b unslaked lime ; dissolve 61b sal soda in 12 quarts of hot, soft water ; then mix, aud fctantl for from 12 to 24 hours. Then pour off all the clear fluid, being caieful not to let the sediment lun off. Boil 3}lb of clsar -grease and 3Jlb of resin in the lye until the grease disappears ; then pour into a box, let it stand a day, and cut into bars. Novice.— The question of the bind of fence te be erected is detemiinable by a magistrate when the owners cannot agree. Theie is nothing in tbe ace as to sheep-proof fences, but as a matter of common sense a fence should be sufficient to prove a bar to the passage of both cattle and sheep.
