Marmalade Pudding. — Beat up £lb butter to a cream, then add £lb sugar, two tablespoonf uls of marmalade finely chopped up, three eggs, two tablespoonf uls of brandy, and £lb flour. Keep beating up the mixture before adding each ingredient. When it is well mixed put it in a well-greased mould, and steam for six hours. Serve with sauce made with a tablespoonf ul of marmalade and three tablespoonf uls of brandy.

Rosella Jelly fob Dessert ob Supper. — Soak 2oz of gelatine in a pint of water with £lb of loaf sugar. Stew about 2£lb rosellas in a quart of water until quite soft, but not so long that the liquor will "jelly." Strain off a pint and a-half of the juice and add it to the dissolved gelatine, with the whites and shells of three eggs. Whisk it all briskly on the fire, pass through a jelly bag, pour into a mould, and leave it to set.

Saveloys. — Take a piece of tender pork free from skin and gristle, and weighing about 21b ; salt it with common salt and a little saltpetre. When it has lain in the salt for two or three days mince it finely, and season it with a teaspoonful of pepper and four sage leaves chopped small. Mix it well with the third of a pound of breadcrumbs. Put the mixture into the skins, tie the end securely, and bake or boil tbe saveloys gently until done enough. Serve hot or cold.

Tapioca Cbeam. — Ingredients: One cup of tapicoa, soaked over night, three pints of milk, four eggs, one pinch of salt.' Cook tapicoa, salt, milk, and yolks of eggs together ; sweeten and flavour to taste. After it is cooked and a little cool beat the whites of the eggs to a stiff froth and stir through ic. Hartford Pudding. — Ingredients: One cup of molasses, well beaten, one cup of suet, choped fine, one cup of milk, one cup of raisins, one cup of currants, half a cup of citron, tbree cups of flour, one saltspoonful of salt, twe teaspoonfuls of baking powder; steam in bag or dish three hours. To be eaten with wine sauce.
