CANADIAN CHEESE.
A bulletin, issued by the Ontario department of Agriculture, calls the attention of Canadian cheesemakers to a deterioration in their produce which is especially dangerous to its inesttye in England, at a time when .New Zealand and Australia are making great efforts to obtain a large share of our custom. Some time ago the cause of the deterioration was charged by the dairymen to the bad condition of the milk commonly supplied by the farmers to the factories. Since that time, however, efforts have been made to induce the farmers to exercise care in the management of their milk, and a great improvement in this respect has been reported. Yet the cheese turned out has deteriorated with the improvement in the milk, an anomally attributed to the carelessness and ■ parisimony of the owners of factories, who often employ incompetent managers in order to save high salaries. Some useful directions for cheesemakers, by Mr James W. Eobertson, professor of dairying at the Ontario Agricultural College, are added. In reference to the alleged" adulteration of Canadian cheese, a report of the Commissioner of Inland Revenue has been sent from Ottawa to the Secretary of State for the Colonies, and issued by our Agricultural department, giving particulars of investigations made by the Colonial Government. The chief analyst has analysed 112 samples from the principal cheesemaking districts of the dominion, and has not found a single example of cheese adulterated with extraneous fat. His conclusion is that the "filled" cheese common in the United States is not made in Canada.
