Subscriber. — Honey vinegar can be made from the honey remaining in the combs, It should be washed off, and the sweetened water thus obtained allowed to ferment. There is no danger of getting the water too sweet, the only objection being that the sweeter it is the longer it will take to become vinegar, but to compensate for this the vinegar will be all the stronger. Mead is made as follows -.-Mix from lib to 21b of honey to the gallon of water, boil for a short time, allow it to ferment for a day or two, and then bung or bottle. Kkply to Wyllie.— Mr Beverly replies to your question :— The prismatic compass requires no stand, unless your hand is unsteady. To lay off a line at right angles to a given line, take the bparing of the given line, then turn round until the reading is 90deg different. Thus, suppose the bearing of the given line is 63deg, the bearing of a line at ripht angles to it will be either 153deg or 333deg. It can be used on any ground by tilting the prism to suit the inclination. Patea Subscriber.— Horehound beer is made in n very Bimilar manner to the method adopted in making hop beer, The horehound should be previously dried. Add a quarter of a pound of horehound, a pound of coarse brown sugar, and threequarters of an ounce of ginger to each gallon of water ; boil for"* one hour, then strain and cool until milkwarm. Add two tablespoonfuls yeast, and allow it to stand for 24 hours, after which bottle for use. L. A. M.— 'l) John Broadwood, the founder of the firm of pianoforte makers of that name, was a poor Scotch carpenter, born, in 1731. Coming to London in 1751 he obtained employment with Tschudi, the harpsichord manufacturer, whose esteem he won by his ability, and became his son-in-law and successor. He subsequently patented his improved square pianoforte, and obtained for his firm the supremacy which it yet holds. (2) Your harpsichord has apparently been made during the reign of George 111. M., Lawrence.— You should have sent fuller particulars as to run, food, &c. We think, however, that there can be no doubt that your fowls are suffering from consumption. New Chum.— You can issue a summons and arrest him. or you ca-n sue him after he is gone, but only in the Supreme Court, if you can get the writ served upon him. You should sue him before he leaves or not at all. 7. C— You can recover damages, STeoman.— As ordinarily used, " esquire "is a mere title of courtesy; but judges, doctors, barristers, justices of the peace, &c, are entitled to it. Struggling Settler. — Inquiries are being made as to the best method of preparing pigskins. Mixer.— (l) The estate would be administered by the Public Trustee, who is empowered to deduct costs to an amount not exceeding 7 per cent. (2) The following duties are payable on the final balance in the estates of deceased persons : — Not exceeding £100, no duty ; for £100 to £iono, £2 per cent. ; £3 per cent, on every additional £1000 up to £5009; and so on, increasing ratio up to £50,100, when the amount reaches £10 per cent. N. B. writes :— ln your reply to a correspondent in last week'n Witness, re freckles, you recommend buttermilk. There is but one certain cure— viz.. the milk from a mare applied daily, not washing the face for a few hours afterwards. For seasickness, sip champagne.
