How to Cook Fish.— Experience in a Glasgow hospital has taught Dr. J. S. Nairne that boiled or ftied fish is a dangerous diet for weak persons, but that steamed fish is harmless. Jumbles. — One pound of flour, lib loaf sugar, 6055 butter worked to a cream, three eggs, and a few drops of essence of lemon or almond's. Bake in a hot oven. When nearly baked enough, glaze them with the white of an egg and sprinkle wilh fino white sugar. ' , New England Pancakes.— Mix three tablespoonfuls of fine flour very smoothly with a little cold milk. Add gradually half-a-pint cream, a small pinch of salt, the wellwhisked yolks of four and the whites of two eggs, a little sifted sugar, and two or three drops of lemon flavouring. Let the batter stand for an hour before it is cooked, then fry in panepkes as thin as possible. Strew a little sugar over them, Will them up, and serve hot.
Suet P-updings,— Sprinkle a little flour ovey a oupful of ohopped suet to keep it from sticking together ; add two and a-half cupfuls of flour, one teaspoonful of baking powder, two chopped apples, one cupful of raisins, three eggs, whites and yolks beaten separately, a little ground spice, and half a cupful of treacle^ Mix well, and steam or boil for two hours. Serve with sauce.
Browned Potatoes with Cheese. — Peel some boiled potatoes, and pare so that they are all of the same size; dip therein liquified butter, and roll them in grated oheese, seasoned with pepper and Salt. Place them in an oven on a buttered tin, just long enough for the cheese to colour, and serve., • .
. Stuffed Cabbage.— Take a fresh cabbage and cut out the heart; fill the space with a stuffing made of cooked chicken or veal, chopped very fine, seasoned, and rolled into balls with yolk of egg. Then tie 'the cabbage firmly together; and boil in a covered kettle for two hours. It- makes a delicious dish, and is useful for using up smal Jpiec'es of meat. , ' ■
