Rismedy kor Painful Wound s. — Take a pan or shovel with burning coals and sprinkle upon them brown sugar, and hold the wounded part in the smoke. In a few minutes the pain will be allayed, and recovery proceeds rapidly.
Okangk Apple Jelly.— A nice variety o£ apple jcily may be made as follows : — I3oil the apple juice aucl sugar in the usual way for about ten minutes, aud then throw in with them some slices of orange a quarter of an inch thick. The peel may be left on, but the pipes must be removed. Let all cook together, and when the apple jelly is potted put two or three slices oi orange into each jar.
Cube foka Bubn. — If a piece of charcoal is laid on a bum the pain will subside immediately, and if left upon the wound for an hour will cure it. This seems almost incredible, but as a piece of charcoal is readily procurable it should be kept in every house for immediate use, and its efficacy tested.
Mandarin Pudding. — Mix a quarter of a pound of fine bread crumbs, a quarter of a pound of well-chopped suet, and a quarter of a pound of preserved ginger, with two eggs and two tablespoontuls of the syrup of the ginger. Pour the mixture into a buttered mould or basin, and steam for four hours.
Croquettes of Fish. — Mince the remains of aDy cold fish, after clearing away the skin and bones ; make it very savoury ; mix with an egg a teaspoonful of milk and the same of flour, to bind all together, and roll into round balls, which should be brut>hed over with egg and powdered with fine bread crumbs. Fry in butter or good dripping to a nice brown, and serve with gravy made by boiling down the bones &c., with an onion.
A New PLum Pudding.— Take onepou'ud boiled carrots, pass through a sieve; one pound of beef suet, finely chopped ; one pound of flour ; one pound of dried rasins rubbed in some of the flour ; one teaspoonf ul of ground cloves ; one teaspoonf ul of ground cinnamon ; one teaspoonf ul of ground allspice ; one teaspoonf ul of grated nutmeg, and one teaspoonful of salt. Mix with enough molasses to moisten all, and boil in a well-buttered and floured pudding cloth, or in a mould, for three hours and a half.
FiiyiNO Batteu. — Beat up together two tablespoonfuls of brandy, the yolks of two eggs, one tablespooni'ul of oli\e oil, and four or live tablespoonfuls ot cold water. Amalgamate with this three tablespoonfuls of line flour, and a good pinch of salt. Beat the mixture five or ten minutes, adding a little more water if too thick. When ready to use it, stir into it lightly and quickly the whites of two eggs whisked to a froth.
