Cheese Fondbe.— Beat up the yolks of eight eggs with a quarter-of-a-pound'of melted butter, half-a-pound of grated cheese ; mix together with the whites of the eggs, whisked to a froth. Bake irk little fondre papers and serve very hot.

■When to Eat Fruit.— The proper time for eating fruits of every description is half-an-hour before breakfast and dinner ; and if in their ripe, raw, natural, and fresh state, the acid which their juices contain, and which is their healthful qualityj is at once absorbed and carried in its strength mto the circulation.

Pare, core and mince apples very fine, add currants, bread, and sugar ; whisk the eggs. When all is thoroughly ready, boil three Lours in a buttered shape. Serve with sweet sauce.

• Biscuit Custard.— Break two dozen macaroons into small pieces, pour over them a hot boiled custard made in the usual way, and stir well until the whole is thoroughly mixed. Pour it into a glass dish, and put on top the whites of two eggs, whisked to a froth, with a spoonful of red currant jelly. Grate a little macaroon crumbs over the top. Serve very cold. Relief from Burns.— The French papers announce the discovery of a remedy, instantaneous in its efficacy, for burns occasioned by oil of vitriol:— A soft paste of calcined magnesia and water, with which the parts burned are covered to the thickness of an inch. The pain is almost immediately alleviated, and after a few hours, when the paste is removed, no scar remains.

TranspabentPudding.— lngredients: Eight eggs, one pound powdered sugar, one-half pound butter, nutmeg, puff paste, and citron. Beat the eggs very light, put them in a saucepan with the sugar, butter, and nutmeg ; set on the fire and stir till it thickens ; set it to cool ; make a rich puff paste, put it around your dish, and the mixture in the middle ; a few strips of citron improves this ; cut it very thin. Bake nearly an hour in a moderately hot oven. German Cream.— Two ounces gelatine, one quart of milk, ten eggs, one-half pound of sugar. Put the gelatine into cold milk for one hour, and then let it come very gradually to a boil over a slow fire. Beat the yolk of tho eggs till very thick, and stir in slowly; add the sugar a spoonful at a time, constantly stirring the mixture over the fire. Stir, boiling slowly, for ten minutes, then pour into a dish wet with cold water, and set aside to cool. Beat the whites of the eggs to a stiff froth, and pour over the cream when it is perfectly cold. Serve very cold. It can be eaten with any preserved fruit.
