Take care to roast poultry by a clear, brisk fire— a slow fire will spoil them. Beets baked until quite tender, and oatenhot, with butter, pepper, and salt, are very nicemuch sweeter and better than when boiled. Celery boiled in milk and eaten with the milk served aa a beverage, ia said to be a care for rheumatism and gout, and a specific in case of small-pox. Nervous people find comfort in celery. A flannel cloth dipped into warm soap-suds and then into whiting and applied to paint, will instantly remove all grease and dirt. Wash with clean water and dry. The most delicate paint will not be injured, and will look like new. , ■ Piokmjd Apples. — Sweet apples make delicious pickles. Peel and quarter them, boil them until tender in vinegar and water ; to one quart vinegar add two pounds of sugar ; heat the vinegar and dissolve the sugar in it ; add clovea and cinnamon, and pour over the apples while hot. Spice cakes to serve with coffee are made of one pound of Bugar, four egga, one teaspoonful each of clovea, cinnamon, nutmeg, and a pinch of pepper. Stir in flour enough to make a dough which can be rolled out ; out out with a plain cooky-cutter ; let them stand for from ten to twelve hours ; then bake. iKxsa Geobqb's Puddino. —One pint of bread crumbs, half-pint flour, tableßpoonful baking powder Bifted in flour, a little Bait, half a pound raiains, quarter-pound currants, quarter-pound chopped suet, coffeecupful milk, one egg ; tied tightly in a bag and boiled three hours ; to be eaten with hard sauce. Oatmbaii as Children's Diet.— lt has long been noted that in countries where oatmeal and not fine flour ia in general use children and adults will be found with the beat-developed teeth and jaws, and so well recognised is the influence of oatmeal upon the teeth that many practitioners order its use as an article of daily diet for children in cases where dentition is likely to be retarded or imperfect. Make a pie of fresh-canned or jam strawberries, raspberries, or peaches : One cup new milk or cream ; one-half teaspoonful cornstarch dissolved in a little cold milk ; one-tea spoonful sugar ; white of two eggs beaten to a stiff froth. Boil three minutes. When quite" cold take top crust from pie, pour on the mixture, replace cruat, sprinkle with powdered sugar, and set away to cool. Very nice. Stewed Kidneys.— Skin and parboil some j sheep's kindeys, cut them in slices, and fry them in butter for a few minutes, with pepper and salt to taste. Mix a tableapoonful flour with a piece of butter in a saucepan, stir till it begins to colour, then add a teacupful of good stock and the same quantity of sherry. Let this boil five minutes, then add it to the kidneys, with a small quantity of parsley finely minced. Make the whole very hot (but do not let them boil) and serve. Lemon Jelly Cake— Take two cups of sugar, one-half cup of butter, one cup of milk, ! three egga, two teaspoonf ala of cream tartar, one teaspoonful of soda, three cups of flour ; mix, and bake in fine, thin layers. For the jelly, grind the rind of three small or two large lemons, and, add the juice of the same with one cup of sugar, one egg, one-half ,cup of water, one teaspooafnl of butter, one, tablespoonful of flour ; mix with a little, water, and boil till it thickens; then place between the layers of the cake. Fabk Custabd.— Put into a small saucepan the yolks of four eggs, four teaspoonfula of sugar, the peel of half a lemon, or a quarter of that grated, a grain of salt ; mix, all well, then add half a pint of milk; set the whole on the fire, stir continually with a Wooden spoon till it gets thick and smooth, but do not let it boil or it will curd j then put it into a basin to cool, stirring now;, and then; pressing through a sieve gives it a nice appearance. Serve in glasaea or cups with any fresh or stewed fruits.
