MR JOHN STEWART'S yERATED WATER MANUFACTORY.

We took a turn round Mr Stewart's factory, and a description of it will be of interest to our readers. Mr Stewart being saiiified tbat there was a good opening for such a venture, decided on casting in his lot with the place, and up to the present has every reason to be satisfied with his investment. He is a hard-headed Scotchman, and possesses a thorough knowledge of his business. With true business foresight he perceived that, in order to secure the trade of the district, tho first essential was a superior article to what had previously been supplied by the trade, and he has been so successful that there is not a competitor now in the district. In order to produce the very best article ha obtained the latest make Of machinery. The machine which he has iu use was shown at the New Zealaud and South Seas Exhibition held in Dunedin, and the following description of it we take from the Otago Daily Times : " The serated water machine, or generator, that used, is one of French make and is of wonderful construction. The manufacturers are Moudollot et Fils, and the motive power that is used is steam supplied from the machinery annexe. The machine is, we understand, the only one of the kind that is in use in the colony, and of its excellence there can be no doubt. It would be superfluous to dilate on its merits when we mention that it was awarded the first order of merit at the Paris Exhibition of 1889. Than that there can be no higher credential. Messrs Grant and Co are more than satisfied with it, and have been so fortunate as to secure the sole agency for it in the Australasian colonies. The carbonised waters which it turns out are claimed to be equal to, if they do not even surpass, the sparkling brightness of French champagne, while the syrups of good fresh fruit can be used without any alcohol or acid preserver. There is in the machine none of the lumbersome gasometer and separator mixers that form a portion of some other machines, the generator itself taking in automatically the alkali and acid as it requires them." Mr Stewart manufactures lemonade, soda water, ginger ale, champagne cider, herb beer, and quinine champagne, besides all descriptions of syrups and cordials incidental to hti particular line of business.
