Testing.

Assuming that a person has a sufficient number of cows m his herd he must test them to find out which, are the most paying animals. By testing for butter-fat he will find out the real merits of each animal, and will find that some of his cows give him a handsome profit on his outlay, while others leave a loss. A record should be kept of each cow's milk from day to day, by which means the value of each would be ascertained.
