THE HOUSEKEEPER.
Oatmeal or Wheaten Cakes.— Half a pound of coarse oatmeal and quarter of a pound of flour, (or half a pound of . coarsely ground wheat-meal),, one dessert spoonful of sugar, one heaped spoonful of baking powder, mixed -; together;; melt- two or three 1 ounces of butter or lard m half a tea-cupful of milk, make a light paste, cut it iato cakes, and bake m a moderate oven. Bed Currant Cream.— Squeeze two pounds of red currants through' a cloth or hair seive ; mix with it a quarter of a pound of sugar, and the rind of a lemon rubbed on the sugar ; beat up twelve eggs, add them to the. currant juice, pour the mixture into a saucepan, and boil over a slow fire^ stirring all the time ;-' put it into a moula .or dish,ar.d serve cold.
