Raw Cabbage Makes A Very Good Salad
Raw cabbage used in salads is a valuable substitute for lettuce. It should be shredded and allowed to stand in ice water some time before using to ensure crispness. Here are a few suggested combinations:— Shredded cabbage, diced celery, diced hard-boiled eggs, chopped pickles, and mayonnaise or boiled dressing. Shredded cabbage, dates cut into quarters, chopped nuts, with sour cream dressing. Shredded cabbage, grated raw carrot, onion chopped fine, boiled dressing or mayonnaise. Shredded cabbage combined with other vegetables in a moulded gelatine salad. Shredded cabbage and diced bananas in equal quantities, with mayonnaise.
