A Tasty Luncheon Dish

Cut up and lightly fry some red and green peppers—not the hot variety—in bacon fat, and place in the bottom of a baking dish. Break in as many eggs as required, usually one per person, season lightly, and cover thickly with breadcrumbs. (The eggs should not be broken.) Top the dish with a generous layer of cheese, and bake in a brisk oven until eggs are nicely set, but not hard, and cheese is browned. Serve with rice (if obtainable) or plain boiled macaroni (well salted).
