" Bill."—The following can be recommended as a recipe for making oyster soup for 70 people:—Use 70 cups of white sauce, of which about one-quarter should consist of liquor from the oysters, and the remainder milk. To make the white sauce use one tablespoonful of butter and one tablespoonful of flour for each cup o£ liauid, approximately 2Jlb of butter and itfb of flour. About 21 dozen oysters are necessary. Use five level tablespoonfuls of salt, U teaspoonfuls of pepper and i teaspoonful of ground nutmeg. Melt the butter.in a saucepan and add the flour. Cook for a few minutes and meanwhile beat the milk and add gradually to the cooked flour and butter. Bring to boil, then cook for two minutes. Add oyster liquor and beat till smooth. Re-beat until the oysters are heated through but do not boll.
