FINE PICK-UP DRINK

AMERICAN ICED COFFEE San Francisco is famous for its coffee and in addition, the care San Franciscans use in preparing coffee is reflected in the quality of the iced drink (states a writer in the San Francisco Chronicle), Iced coffee, with or without sugar or cream, is a pleasant variation from hot coffee, and is a delightful beverage during the day. Its stimulating quality makes it a fine pick-up drink. Those who enjoy a glass in the late afternoon will notice the quick energy it produces. To serve iced coffee at its best, tne beverage must be made with the same exacting care as used in preparing hot coffee, always remembering to use good coffee, make it well, and have it strong enough. TWO GOOD METHODS Here are two ways of making it:— 1. Prepare regular strength coffee beverage and set in a refrigerator in a covered container for three to six hours to chill thoroughly. When this is done the delicious flavour of hot coffee is retained, and when the cold beverage is added to cubes of ice in the tall serving glasses there is little or no dilution of the coffee. 2. If there is not time to follow this procedure, simply make doublestrength coffee, using four level tablespoonfuls of coffee to each cup of water and pour the hot coffee over the ice in tall glasses. Variations of the above are;—

Coffee Cooler. —Place a scoop of vanilla ice cream in each tall glass of thoroughly chilled coffee. Top with a spoonful of whipped cream if desired. Mocha Float.—Place two tablespoons whipped cream in bottom of each glass. Add a scoop of chocolate ice cream. Fill glass with thoroughly chilled iced coffee.

With Flavoured Whipped Cream For variety, too iced coffee with whipped cream flavoured with sweetened chocolate folded in (or cinnamon and nutmeg or grated bitter chocolate foldde in. or with grated orange peel folded in).

Coffee Cubes—Freeze single strength coffee in mechanical refrigerator. Then use these coffee ice cubes and singlestrength cqffee made in _ your regular way for all the above recipes.
