The prospect that the Chinese may become a nation of milk drinkers is opened up by a survey of the dairy business in Nanking, which shows that the capital maintains 20 dairies in a state of comparative prosperity. An analysis of the consumers revealed teachers and students as the most regular customers. Officials came next, hut it was apparent that neither the ordinary merchant class nor those still lower in the social scale had yet come to appreciate the virtue of milk as an article of regular diet. Credit for introducing milk to the Chinese in Nanking is given to a foreign missionary, Dr W. C. Macklin, formerly director of*the Drum Tower Hospital, Nanking’s 20 dairies own between them COO cows. The largest is the one operated by Nanking University, where all the latest sanitary devices have been installed.
