TO THE EDITOR.

Sir, —A correspondent in 'your issue of the 17th inst., writing over the signature "Fair Play,” attempts to enlighten or mislead your readers on the subject of cheap and dear bread. “Fair Play” says that cheap bread is made from flour, water, and yeast, and that dear bread is made with milk and other ingredients to improve the flavour and quality, therefore making a loaf that cannot be sold cheaply. Well, wo agree with “Fair Play” that milk and other ingredients improve the flavour and quality of the bread, but we know that the same bread is sold at the low price by disposing of it on the cash-over-the-counter system, which means no bad debts and cheaper bread for the public.—We are, etc., F. and A.
