GENERAL HINTS.
Milk boils over more quickly than any other food. It is therefore a Rood plan to have some simple means at hand whereby the temperature can be lowered quickly without attempting to lift the pan. If a large metpl tablespoon is kept handy, but in a cool place, this can be plunged into the milk immediately it starts rising to the top of the pan. The cold metal robs the boiling milk of its heat, causing it to subside. You can then remove the saucepan to a cooler place without any risk of spilling the milk. When the cane seats of chairs begin to sag, scrub first the top and then the bottom with hot aaap and water. Dry in the open air. This causes the cane to shrink and makes the seats as firm as new ones. When using stale bread for puddings soak it in cold milk or water, not hot, in order to make it light and numbly. Steaming, stewing, and braising are the most economical methods of cooking, both •in the use of fuel and in the retention of nourishment. Soap powder should never be used when delicate ornamental china is being washed, as it would probably damage the ornamentation on the china. To make coal last longer, dissolve a handful of washing soda in a gallon of water, and throw the liquid over the coal when you get in a fresh supply.
