TO MAKE REFRESHINGTEA. A FEW DOX'TS. Don t infnso lea with water that- has "been boiling away for hours. All tlic oxygen has boon boiled out of it. ]t will be flat; and insipid, and will not moke & nice, retelling cup of tea. Don't try to infuse tea with water that is not thoroughly boiling. It should bo freshly drawn from the tup for each infusion, brought lo tho boil—furiously boiliiig,—and immediately poured on the leaves. Don't neglect to heat your teapot beforo piloting in the leaves. ]f tho teapot is told when tho hoilinj water in poured in, lite temperature of the boiling water ia rcc.nccd accordingly, and a proper infusion k not made. j Don t infuse tea. more than fivo minutes, j The delicate flavour and good qualities 0 f the tea-leaf are extracted first, the tannia | last, so you should try to dedge tho tannin by pouring the liijuor off the leaves after five minutes' infusion at most. Don t stand the teapot on tho range or near the firo to infuse—the tea might boil and if it docs it will spoil. Don t buy any tea thats offerod to you, even if you think you're getting it cheap. Always buy the best you can afford. Tlio best tea you can get anywhere is " Tiger" lea, and \ou can get it in .several grades, each the best value obtainable in N.Z, Don't forget that blended tea is the best tea, and the best blended tea id "Tiger" Tea. Don't expect to get real refreshment and Jioalthful satisfaction from drinking tea unless you take a little trouble, first, to got the right tea, and then to make it right.
