THE CHEESE INDUSTRY.
QUALITY OF MILK CONDEMNED. (Per Press Association.) Dunedin, June 3. ; South Island-dairymen' had a keen .discussion t'h'is morning on the proposal that milk should be paid'for. according to quality. Reference was made to thedissatisfaction expressed at- Home because of the varying quality, of New Zealand 1 cheese. * Mr Cuddie, director of the dairy division, said) that dairymen were faced with the fact that milk supplied to cheese factories was not improving, ami experienced- managers would say that they 'had more f difficulty to now make good-cheese t'han they had some years ago. The inspection of dairy farms had not been attended with very much success. The number of men available to the dairy department was nltogethetoo smalt. It*would be a mistake, however, to increase the number of inspectors, as inspection was costly and dairy - farmers objected to over-inspec-tion! It seemed to him that, it would be profitable for all concerned to aim at securing a. high standard in t'.he quality of the milk supply. The- discussion, is proceeding.
