TEST OP KEEPING QUALITIES. With the object of testing the qualities txf New Zealand meat after a long period of ftorago, Mr W. D. Lysnar, of Gisborne, had a sheep killed in November last and kept in tho freezing chamber until the other day, when it was removed and tiie meat di tributed amongst a few friends. Tae meat came out of the cold store after seven months’ storage with-, the bloom’still beautifully fresh upon it, and even after being kept hanging for three days it was still in splendid condition. When evoked it proved ovc?o:lingly juicy and tender, and no one without prior knowledge would have been able to tell that it had been frozen. The tost was made with tho object of showing that it was qniie possible to hold storks'of frozen meat instore in New Zealand, with tho object of regulating supplies to the Homo market. The "Poverty- Bay Herald" stales that a joint, of the meat that was sent to it fully confirms Mr Lysnar's contention
that carcases stored for even so long a period as seven months suffer no deterioration in quality.
