THE CHEESE TRADE.
DEVELOPING SOUTH AFRICAN CONNECTION. The Taieri and Peninsula Milk Supply Company, of Dunedin, the inosx important co-operative dairy concern -in the Dominion, is developing a very satis.aotorv trade in butter and cheese with South Africa. In connection with the latter the company has adopted a method of casing suitable for this particular trade which is worthy of comment. The cheese has to be carried as ordinary cargo, and the ordinary casing for export cheese, suitable where the produce is conveyed in insulated holds, is not, therefore, desirable. -A square case has been adopted, and, to keep the cheese free of vermin, this is closely boarded, but with, small augur holes bored heie and tlleie';; to, provide;' for ventilation. Two 40lb clieese—"niediiahs" being tlie size demanded—are carried in the. case, the cheese being -separated by half-inch boards. The end boards are" an inch in thickness, but thoH> of the sides only half an inch. The ends are bound with 11 gauge wire and the usual neat impressed brand is employed. The package presents a very attractive appearance and is said lo be very suitable for the purpose.
