(To tho Editor "N.Z. Times.”) Sir,—Us good enough, to allow mo to Sorrcct two errors which appear in my letter of yesterday's übuo of your paper. I am made to say that no factory can depend upon a “poor” supply of milk. It should bo "pure” supply. Again, m allusion to tho idVal conditions “posuossod” by tho Government, tho word "paeeod” is substituted. i would like to add a fow wolds lo my letter. What a fine opportunity presents itself of testing tho moot point of whether it is possible to tarn out an article equal to tho Danish batter in cfuaiity. i!y tho Government having control of its own milk supply and its manufacture into butter under Dio immediate supervision of its own exports, I believe it can. In any case, it would bo of great interest to put tho question to tho test. It is not likely to bo solved under divided inanagomont or until tho suppliers are educated to observe a different system.— I am, etc., E.W.H. Levin,.. November 28th, 1807.
